15 Minute Fish with Tomato and Fresh Lemon
I cannot take full credit for this one. I got this fantastic little recipe from my girlfriend, Emily Sawyer, a Certified Nutrition Specialist based in Toronto. I made a few tweaks to my version. Its so simple, so fast and so healthy. You don’t have to use Halibut but I chose to for this time. Any white fish will do. I’ve done this recipe with Cod, Tilapia, Mahi Mahi and Haddock. Whatever you’re into/whatever the grocery store has on sale!
Ingredients:
Fish:
1 Halibut Filet
1 Clove of Garlic
Half of a Lemon
1 Tomato
2 Thyme Sprigs
1/4 tsp Cracked Pepper
1/4 tsp Sea Salt
1 tsp Olive Oil
Rinse the Halibut Filet and pat dry with a paper towel. Season with Cracked Pepper and Sea Salt. Set Aside.
Wash the Tomato and Lemon. Chop the Tomato into large chunks and the Lemon unto half wheels. Peel and roughly chop the Clove of Garlic.
Place the Halibut onto a large piece of parchment paper. Roll up the ends of the parchment until it creates a rough bowl shape around the fish. Add the tomato, Lemon, chopped Garlic and Thyme Sprigs. Drizzle with Olive Oil.
Bake at 350 for 15 minutes. Don’t over cook the fish! As long as its no longer translucent- its done! It should flake away nicely.
Transfer onto a ** warmed plate or just eat it right out of the parchment paper bowl!
