Mixed Greens with Fresh Mango and Crumbled Goat Cheese
I love eating a really hearty salad for lunch. I started experimenting with dressings this summer in Nashville and I think I hit the jack pot with this one. The fresh mango paired with the goat cheese and garlic-y dressing is totally to die for. Feel free to substitute any of the herbs in the dressing with others that you enjoy!
2 tbs Olive Oil
1 tsbp White Wine Vinegar
1 Clove of Chopped Garlic
1 tsp Lemon Juice
1 tsp Fresh Chopped Basil
1 tsp Fresh Cilantro
1/4 tsp Cracked Pepper
1/4 tsp Sea Salt
Plate Full of Fresh Mixed Greens
1/3 Cup Fresh Diced Mango
Crumbled goat Cheese
Small Handful of Organic Pea Shoots
This salad is so quick so super delicious. Rinse the Mixed Greens and set them aside on a plate. Chop the mango up (I like to buy pre-peeled and just have them in the fridge for snacking). Set aside. Mix together all the ingredients for the dressing and whisk in a small bowl. Simply place the Diced Mango on top of the Mixed Greens, add Crumbled Goat Cheese and a Handful of Organic Pea Shoots. Pour the dressing over the salad and enjoy!
