Avocado, Tomato & Goat Cheese

Avocado, Tomato Salad with Crumbled Goat Cheese & Balsamic

This is an awesome light snack to have at anytime of the day. Seriously, I think I’ve eaten this at 10am once- so delicious. Try to get a really ripe tomato (possibly organic- they taste so much better). If you’re not a balsamic fan, try using red wine vinegar as a substitute.

Salad:

½ Ripe Avocado

1 Whole Organic Tomato

Crumbled Goat Cheese

Dressing:

½ tsp Balsamic Vinegar

¼ tsp Olive Oil

Simply halve the avocado and slice it with a paring knife lengthwise. I like to leave the other half of the avocado with the pit in it (it helps to keep it fresher, longer). Lightly spoon out the sliced insides onto a cutting board.

Slice the tomato into discs and plate. Add sliced Avocado and crumbled Goat Cheese. Finally, pour the dressing over the entire salad and enjoy! Simple!
